Mom's Snow Cream

We woke up this morning to 10+ inches of snow.  I know to some of you that may not be very much but we never see that much snow here.  While on Facebook I saw quite a few people from my hometown talking about snow cream.  I haven't had snow cream since I was a child.  Snow cream is just like it sounds, "ice" cream made out of snow. 

Mom's Snow Cream
2 cups sweetened condensed milk
1 cup sugar
2 tsp vanila
1 egg
8 cups snow

Directions:  Beat egg until you can no longer see white.  Add sugar, milk, and vanilla.  Go out into clean snow (we NEVER did the first snow of the year) and gather a bunch of snow.  Pour the mixture over the snow.  May have to add a bit of milk to reach the consistency you desire.

Here's what you'll need (plus 8 cups snow):

Beat egg until no longer see white.


Add 2 cups sweet condensed milk

Add 1 cup sugar

Add 2 tsp vanilla

Get your snow




Pour the mixture over the snow and stir.

Our Thoughts:
Snow cream is definitely a country thing.  When I told Scott that I was going to make snow cream he had no idea what I was talking about.

The kids loved it.  They had a lot of fun helping to make it and I think they were just surprised at how much it tasted like ice cream.  Scott took a bite and said, "tastes just like ice cream" but I still think he was freaked out to eat snow because he only had that one bite and that is not like him at all.

It did remind me of growing up but I will say it was way too sweet for me, which is probably why the kids loved it so much.  I think the sweet condensed milk and the sugar just put it over the top for me.  LOL

I'm glad to have done this with the kids.  I hope it made a memory for them.

White Chocolate Oatmeal Bars

White Chocolate Oatmeal Bars adapted from Unknown source
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinammon
1 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla or grated peel of one orange
3 cups quick cooking oats
2 cups butterscotch chips

Directions:  Preheat oven to 375 degrees.  Combine flour, baking soda, and cinammon in small bowl.  Beat butter, sugar, brown sugar, eggs and vanilla in large bowl.  Gradually beat in flour mixture.  Stir in oats and butterscotch chips.  Spread dough into greased 15x10 inch pan.  Bake for 18-20 minutes or until very lightly browned.

Modifications:
-I used 2 packages of brown sugar oats.
-I used white chocolate chips instead of butterscotch.

Here's how I did it:

#1 I preheated the oven to 375 degrees.


#2 I mixed together the flour, baking soda and cinnamon.

#3 In a separate bowl, I beat the butter, eggs, brown and white sugar.


#4 I slowly added in the flour mixture.



#5 I stirred in the oats.


#6 I stirred in the white chocolate chips.


#7 I spread the mixture out onto a cookie sheet.


#8 Into the oven for about 20 minutes.

Review:

Let's make one thing clear up front.  I am not a baker.  I have a lot of respect for those of you out there who bake cookies and pies and cakes.  It is just way too much of a precise science for me and I'm more of a "taste it and see if I need more of xx" kind of girl.

Having said all of that, I have seen so many Facebook and blog posts recently about people doing their Christmas baking that I decided to give it a whirl.  I had all of these ingredients on hand.

I didn't have the right pan to cook these bars in but the cookie sheet worked out ok.  I was afraid to use a 9x13 baking dish because I thought it would have been too deep.

Bottom line . . . these bars are great!  You could easily substitute regular dark chocolate chips or use the butterscotch chips that the recipe calls for.  The little packets of oatmeal worked out great, too.

Kanin said, "These are perfect.  Crunchy on the outside and soft in the middle."  I guess that it endorsement enough.

Holly's "Whatever You Have" Kind of Banana Bread

A couple of weeks ago my friend, Holly, posted this recipe for banana bread and it looked amazing. On the day she posted it, though, I had just thrown out a couple of bananas. So, I was kind of excited when the kids didn't eat the last couple of bananas of this bunch so I could try out her recipe.

Holly's "Whatever You Have" Kind of Banana Bread Recipe:

1 1/2 c of flour
1c of butter semi melted (pop it in the microwave for 20 seconds)
1c of sugar
1 egg
2 smashed bananas
1/2 c of sour cream
1T of vanilla
Few dashes of cinnamon
A dash of salt

Optional:
1/2 c of juice
1/4 cup of vegetable oil

Directions: Preheat the oven to 350 degrees. Mix all of the dry ingredients together in a bowl and set aside. Next, mix the rest of the ingredients in a different bowl. When liquid mixture is blended well, slowly add the dry ingredients until everything is smooth. Make sure to coat your pan with Pam and flour really well because it tends to fall apart when you cool it afterwards. The bread takes between 40 and 50 minutes to bake.

Modifications:

-I added a small packet of pecans.
-Holly says that you can also add some juice to it.

Here's how I did it:
#1 Preheat the oven to 350 degrees.


#2 In a bowl, I put 1 1/2 cups of flour and 1 cup of sugar and mixed it together.


#3 In a separate bowl, I put an egg, 1 cup of softened butter, 1T of vanilla extract, 1/2 cup of sour cream and mixed it together.








#4 Before I added the dry and wet ingredients, I sprinkled some cinnamon into the flour/sugar.


#5 I put the 2 over-wripe bananas in with the wet mixture and started smashing them and stirring them in.




#6 I added in 1/4 cup of vegetable oil.



#7 Finally, I mixed in 1 small package of pecans.


#8 I sprayed down a pan with Pam and then floured it.

Review:

One word describes this banana bread-MOIST! I don't know if it is the vegetable oil or the sour cream but it was so moist and yummy!
