Don't Peek Chicken

Don't Peek Chicken adapted from Mr. Food
1 cup uncooked long-grain rice
1 (10-3/4 ounce) can cream of mushroom soup
1 (10-3/4 ounce) can cream of celery soup
1 envelope onion soup mix (from a 2-ounce box)
1 soup can cold water
1 garlic clove, crushed
1 teaspoon chopped fresh parsley
1 teaspoon Worcestershire sauce
1 chicken (3-1/2 to 4 pounds), cut into 8 pieces
Paprika for sprinkling

Instructions
  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, mix together rice, soups, soup mix, water, garlic, parsley, and Worcestershire sauce.
  3. Pour mixture into prepared pan. Press chicken into mixture. Sprinkle with paprika, then cover tightly with aluminum foil.
    4. Bake 1-1/4 hours. Do NOT open cover (not even to peek) during baking.



Modifications:
-I used quick cooking rice.

Here's what you'll need:
 Preheat the oven to 350 degrees.

Mix the soups, onio soup mix, parsley, and garlic.

Add the water and the worcestershire sauce.

Mix 

Lay the chicken breasts in a baking dish.  Pour the soup mixture over the chicken. 
  
Cover the dish with tin foil.

Place the dish in the oven and cook for 1 hour and 15 minutes.

Our Thoughts:
How can you go wrong, flavor-wise, when you use cream of anything? The combination of the cream of celery, cream of mushroom, and onion soup mix packed tons of rich, comforting flavor.

The chicken was moist and tender and really soaked up the soup. 

I used quick-cooking rice rather than cooking the rice in with the chicken.  It still tasted great.  We just spooned the soup over the rice and then laid the chicken on top of it.

Coffee-Braised Pot Roast with Caramelized Onions

Coffee-Braised Pot Roast with Caramelized Onions adapted from Eating Well
1 4-pound beef chuck roast, (see Ingredient note), trimmed of fat
1/2 teaspoon salt, or to taste
Freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil, divided
2 large onions, halved and thinly sliced (4 cups)
4 cloves garlic, minced
1 teaspoon dried thyme
3/4 cup strong brewed coffee
2 tablespoons balsamic vinegar
2 tablespoons cornstarch mixed with 2 tablespoons water

Directions: 

Preheat oven to 300°F.  Season beef with salt and pepper. Heat 2 teaspoons oil in a Dutch oven or soup pot over medium-high heat. Add beef and cook, turning from time to time, until well browned on all sides, 5 to 7 minutes. Transfer to a plate.

Add the remaining 2 teaspoons oil to the pot. Add onions, reduce heat to medium and cook, stirring often, until softened and golden, 5 to 7 minutes. Add garlic and thyme; cook, stirring, for 1 minute. Stir in coffee and vinegar; bring to a simmer. Return the beef to the pot and spoon some onions over it. Cover and transfer to the oven.

Braise the beef in the oven until fork-tender but not falling apart, 2 1/2 to 3 hours. Transfer beef to a cutting board, tent with foil and let rest for about 10 minutes.

Meanwhile, skim fat from the braising liquid; bring to a boil over medium-high heat. Add the cornstarch mixture and cook, whisking, until the gravy thickens slightly, about 1 minute. Season with pepper. Carve the beef and serve with gravy.

Here's what you'll need:

Preheat oven to 300 degrees.

Slice up an onion.

Mince up garlic cloves.


Season with salt and pepper and sear in a stockpot.

Pull the beef out of the pan and lay it on a plate.
 Once you take the meat out, put the onions in.  Let them caramelize.

Once the onions are soft and brown, add the garlic and thyme.

Add the coffee and balsamic vinegar.

Add the meat back to the pot.

Pile the onions onto the meat.

Cover the pot and put in the oven for 2 1/2 to 3 hours.

Once the meat is fork-tender, remove the pot from the oven.  Mix the corn starch solution.

Pull the meat out of the pot and add the cornstarch mixture.

Let this simmer for a minute or so until the sauce thickens.

Pour the sauce back over the meat.

Our Thoughts:
My family loves pot roast.  This dish was a simple and easy way to make pot roast.  The onions did have a sweet, tangy flavor from the coffee and the vinegar and they had a good caramelization on them.

I couldn't tell that the coffee really "braised" the pot roast as it didn't have a particularly distinct flavor other than the base of onion.  The meat was tender but didn't shred apart.

As good as the dish was, we all agreed that we still preferred my Mom's Roast.

I served this with a Potato Cauliflower Mash.

Easy Beef Casserole

Easy Beef Casserole adapted Mr. Food
1 pound ground beef
1/4 teaspoon salt
1/2 (16-ounce) package frozen mixed vegetables
1 (10.75-ounce) can cream of chicken soup, undiluted
1 cup (4 ounces) shredded Cheddar cheese
1/2 (32-ounce) package frozen seasoned potato nuggets

Directions:  Preheat oven to 400 degrees.  Cook ground beef and salt in a skillet over medium heat, stirring until meat crumbles and is no longer pink; drain. Spoon ground beef into a sprayed 2-1/2-quart shallow baking dish.Layer frozen vegetables, soup and cheese over ground beef. Top with frozen potatoes.
    
Bake casserole for 30 minutes or until potatoes are golden.

Modifications:
-I added a diced garlic clove.
-I added 1 chopped onion.

Here's what you'll need:

Preheat the oven to 400 degrees.

I "chopped" an onion with my Vidalia Chop Wizard.


Sidenote:  Have you seen these?  I got it for Christmas and it "chops" everything for you in perfect little pieces.  Love it!

Just place it on the grate (comes with 2 different sizes) and close the lid down.

Here's what you get.  You can buy them at Bed, Bath & Beyond.

I switched out grates and then "diced" a garlic clove.


Brown the ground beef, onions, and garlic.

Once browned, put the meat in a baking dish. 

Add frozen vegetables.

Spread the undiluted cream of chicken soup.

Sprinkle with cheese.

Top with diced hashbrown potatoes (or any type of potato you prefer).

Put in oven for 30-40 minutes.

Our Thoughts:
This was a good, comforting dish for a cold winter day.  I was a bit skeptical about using cream of chicken soup with ground beef but it added a bit of sweetness that I wasn't expecting. 

This type of recipe is great for slipping veggies onto your kids' plates while masking it with the gooeyness of cheese and potatoes.

Shepherd's Pie

Shepherd's Pieadapted from Taste of Home Everyday Light Meals
6 medium potatoes
1lb carrots, cut into 1/4-inch slices
1 1/2lblean ground beef
1 large onion, chopped
1 jar (12oz) fat-free beef gravy
1 tsp salt, divided
1/2 tsp rubbed sage
1/2 tsp dried thyme
1/4 tsp dried rosemary, crushed
1/4 tsp pepper
1/3 cup fat-free milk
1 Tbsp butter
2 Tbsp shredded Parmesan cheese

Directions:  Peel and cube the potatoes; place in a large saucepan and cover with water.  Bring to a boil over medium-high heat; cover and cook for 20 minutes or until tender.  Add 1inch of water to another saucepan; add carrots.  Bring to a boil.  Reduce heat; cover and simmer until crisp-tender, about 7-9 minutes.  Drain.
 In a large nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain.  Stir in the carrots, gravy, 1/2 tsp salt, sage, thyme, rosemary and pepper.  Transfer to a shallow 3qut baking dish coated with nonstick cooking spray.
 Drain the potatoes; mash with milk, butter and remaining salt.  Spread over meat mixture.  Sprinkle with Parmesan cheese.  Bake, uncovered, at 375 degrees for 40-45 minutes or until heated through.

Diabetic Exchange:  3 lean meat, 2 starch, 2 vegetable, 1/2 fat

Modifications:
-I used ground chicken instead of ground beef.
-I added a can of Italian styled diced tomatoes.
-I used a packaged gravy instead of a jar.
-I did not sprinkle with Parmesan cheese.
Here's what you'll need:

Peel and cube the potatoes.

Slice up the carrots.

Dice up the onion.

Put the carrots in water to boil and soften.

Preheat the oven to 375 degrees.

Brown the ground chicken.

Cook the potatoes, drain and add the butter.

Add the onion to the ground chicken.

Once the chicken is cooked through, add the carrots.

I decided to use a can of Italian-style diced tomatoes.

Add the tomatoes and the herbs.

Make the gravy.  If using jarred gravy, skip this step.

Add the gravy to the pot and let simmer for 5-6 minutes.

Pour into a greased baking dish.

Spread the mashed potatoes over the top.

Bake in the oven for 40-45 minutes.

Our Thoughts:
We love shepherd's pie around this house and this one is no different.  The addition of the brown gravy in with the mixture of onions and tomatoes really gave an extra depth.  Scott said it was one of his favorite meals that I have made in a long time and he had 3 helpings! 

This is a perfect comfort food dish!
