Seven Layer Casserole
Meatloaf
Sloppy Maple-BBQ Turkey Joes with Roasted Acorn Squash
Ratatouille Pizza

Seven Layer Casserole from Mennonite Girls Can Cook
3 medium potatoes, thinly sliced
1 onion, sliced into rings
2-3 carrots, thinly sliced
1/2 cup uncooked long-grain white rice
2 cups peas, frozen
1 pound pork sausage or farmer sausage
1 10 oz. / 284 ml can condensed tomato soup
1 cup water
salt and pepper to taste

Directions:  Lightly grease 2 1/2 quart casserole dish. Layer the potatoes, onions and carrots.
Sprinkle with a layer of rice and then peas. Arrange sausages on top.  Combine tomato soup with water and pour evenly over casserole.  Season with salt and pepper.  Cover and bake at 350°F for about 1 1/2 to 2 hours.


Meatloaf from Pioneer Woman
1 cup milk
6 bread slices
2lbs ground beef
1 cup grated Parmesan cheese
1 teaspoon salt
1/4 tsp seasoned salt
Freshly ground black pepper
1/4 to 1/2 cup minced flat-leaf parsley
4 eggs, beaten
8 to12 thin bacon slices

Tomato Gravy
1 1/2 cups ketchup
6 Tbsps brown sugar
1 teaspoon dry mustard
Dash or two of hot sauce

Directions: Preheat the oven to 350 degrees. Pour the milk over the bread and allow it to soak for several minutes.

Place the ground beef, milk-soaked bread, Parmesan cheese, salt, seasoned salt, black pepper, and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.

Form the mixture into a loaf shape on a broiler pan, which will allow the fat from the meat to drain. Line the bottom of the broiler pan with aluminum foil to avoid having to scrub later.

Lay bacon slices over the top, tucking them underneath the meatloaf.

Next, make the tomato gravy: Pour the ketchupinto a small mixing bowl. Add the brown sugar and dry mustard and splash in the hot sauce. Stir until well combined. Pour one-third of the gravy over the top of the meatloaf.

Bake for 45 minutes, then pour another one-third of the remaining gravy over the meatloaf. Bake an additional 15 minutes. Serve with the remaining gravy on the side.

Sloppy Maple-BBQ Turkey Joes from Everyday Magazine
1Tbsp extra-virgin olive oil
1 1/2lbs ground turkey
1Tbsp poultry seasoning
Salt and pepper
1 small red bell pepper, chopped
1 small onion, chopped
2 cloves garlic, finely chopped
1 cup tomato sauce
1/4 cup dark amber pure maple syrup
About 3Tbsp soy sauce
About 2Tbsp cider vinegar
About 2Tbsp brown sugar
1 rounded Tbsp dijon mustard
8 soft burger rolls, split
Shredded cheddar or pepper jack cheese, chopped scallions,
and chopped pickled for topping

Directions:  In a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat.  Add the turkey and season with the poultry seasoning, salt and pepper.  Cook until browned, then stir in the bell pepper, onion and garlic and cook until vegetables are tender, 5 or 6  minutes.  In a bowl, stir together the tomato sauce, maple syrup, soy sauce, vinegar, brown sugar and mustard.  Pour the sauce over the meat and simmer over medium-low heat for a few minutes to combine the flavors.  Serve the sloppy turkey on the rolls with toppings.

Ratatouille Pizzas from Everday Magazine
3 Tbsp extra-virgin olive oil
1/2 small eggplant, chopped
Salt and pepper
1/2 orange bell pepper, chopped
1 pint grape tomatoes
3 cloves garlic
2 tsps fresh thyme leaves
1/2 zucchini, quartered lengthwise and cut crosswise
  1/2 inch thick
1lb refrigerated pizza dough, cut into quarters
1 1/4 cups shredded mozzarella cheese

Directions:  Place an inverted baking sheet on a rack in the lower third of the oven and preheat to 500 degrees.  Place a second inverted baking sheet on a work surface and cover with parchment.

In a nonstick skillet, heat 2 Tbsps olive oil over medium heat.  Add the eggplant, season with salt and cook, stirring occasionally, until tender, about 10 minutes; transfer to a bowl.  Add 1 teasponn olive oil and the bell pepper to the skillet and cook until crisp-tender; add to the eggplant.

Meanwhile, using a food processor, puree three-quarters of the tomatoes, the garlic and thyme; season with salt and pepper.  Transfer to the nonstick skillet and simmer over medium heat until reduced to about 1/2 cup, about 5 minutes.  Halve the remaining tomatoes and place in a bowl.  Add the zucchini and remaining 2 teaspoons olive oil; season with salt and pepper and toss to coat. 

Stretch the pizza dough into 4 rectangles sized to fit the parchment, leaving a little space between each rectangle.  top with the cheese, tomato sauce andvegetables.  Transferthe pizzas on the parchment to the preheated baking sheet in the oven.  Bake until golden and crisp, 15 to 20 minutes.

8 to 12 bacon slices (I’ll use turkey bacon)

¼ cup dark amber pure maple syrup

1 small bag frozen peas

Shredded cheddar cheese (whatever you want on top of sloppy joes)
1lb refrigerated dough (or buy a Boboli)

Creamy Chicken Taquitos

Baked Creamy Chicken Taquitos adapted from Sister's Cafe
1/3 cup (3 oz.) cream cheese
1/4 cup green salsa
1 Tb fresh lime juice (1/2 lime)
1 tsp chili powder
1/2 tsp cumin
1/2 tsp onion powder
1/4 tsp granulated garlic
3 Tb chopped cilantro
2 Tb sliced green onions

2 cups shredded chicken
1 cup grated pepperjack cheese

fajita size flour tortillas (or small corn tortillas)
cooking spray
kosher salt

Directions:  Soften cream cheese in microwave for 20-30 seconds. Stir in green salsa, lime juice and spices until well mixed then add cilantro and green onions. Stir in shredded chicken and pepperjack cheese and combine well. **this can be made ahead of time and stored in the fridge.

Preheat oven to 425 degrees. Line cookie sheet with Silpat (or tin foil, lightly sprayed with cooking oil).

Working with 3-4 tortillas at a time, briefly heat in microwave so they are more malleable and easier to work with. (Any time you want to heat up flour tortillas, it's a good idea to place a damp paper towel draped over a small stack of them in the microwave. If I have more than 5, I will place a damp paper towel in the middle of the stack as well.) Spoon 2-3 Tb of mixture in a row across the bottom third of tortilla, keeping 1/2 inch away from edge. This makes it possible to roll it up very tightly. Place taquitos seam side down on cookie sheet, making sure they are not touching. Lightly spray with cooking spray and sprinkle with kosher salt. Bake for 15-20 minutes or until crisp and edges start to turn golden brown.

Serve with your favorite salsa, guacamole, and sour cream.

Modficiations:
-For some reason my produce was left off of my shopping list so I did not have cilantro or green onions.


Here's what you'll need:

Preheat oven to 425 degrees.

Since I used frozen chicken breasts, I thawed them and then boiled the chicken.

Put some sour cream in a bowl and pop it in the microwave for 30 seconds.

Add the green salsa, herbs and cheese to the cream cheese and mix.

Pull the chicken out of the pot and shred it.  Add it to the cheese mixture.

Put 3-4 tortillas on a plate and cover with a damp paper towel.  Warm up for about 15 seconds.

Spoon out the chicken and cheese mixture onto the tortilla and roll tightly.

Place on a cookie sheet covered in tin foil.  Spray the tin foil with cooking spray so that the taquitos won't stick.

Lightly spray the taquitos with cooking spray and sprinkle with coarse salt.

Pop into the oven for 15-20 minutes.

Our Thoughts:
These taquitos were so good.  I was really surprised at how much flavor they actually had.  They were creamy with plenty of chicken and just a hint of spice but not too much for little kids.

You could easily make this spicier by adding green chilies or a hotter salsa verde. 

I used frozen chicken breasts but this dish would be even easier by using a pre-cooked rotisierrie chicken.

Crockpot BBQ Short Ribs

Crockpot BBQ Short Ribs from Kraft Foods
4lb beef short ribs
1 large onion, coarsely chopped
1/4 cup flour
1 cup KRAFT Original BBQ Sauce
1/4 cup honey
1 Tbsp yellow mustard

Directions:  PLACE ribs in slow cooker; top with onions. Mix remaining ingredients; pour over ingredients in slow cooker. Cover with lid.

COOK on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours). Remove ribs from slow cooker; cover to keep warm.

SKIM excess fat from sauce; return ribs to sauce. Stir gently until evenly coated.

Here's what you'll need:

Chop up an onion

Mix all ingredients together

Place ribs in bottom of crockpot and pour mixture on top.  Cook for 6-8 hours on low.

Even in the crockpot, there was some glazing and some crisp.
Our Thoughts:
This dish was so good.  About 3 hours after putting it in the crockpot, I could not wait for dinner to come.  The bbq sauce was sweet with a bit of spice and although the ribs were "fall off of the bone" there was also some good carmelization and crunch to them, as well.

Definitely try this dish!

I was wondering if you guys would give me your opinions on something.  Ever since this blog has started I have posted all recipes that I have tried, both good and bad, I'm wondering what your thoughts are on me just posting the recipes that we would give a "4" or "5"?  Is it worthwhile for me to post all of the recipes, even the ones that we dont' like?

Andrea's Veggie-Filled Burgers

I got tonight's recipe from my friend, Andrea.  I loved that it packed in a few extra veggies and since it was a warmer day, burgers was a great dinner.

Andrea's Veggie-Filled Burgers
1 med sweet potato

1 yellow squash
1 zucchini
1 med onion
1lb or so diet lean hamburger
Steak seasoning to taste (probably 1.5 TBSP)
1/4 cup bread crumbs
1 tsp onion powder
2 TBSP steak marinade (I get this at the best of Missouri so I am not sure you can find it in the store)

Directions: Peel all 4 vegetables and shred. Mix shredded vegtables with rest of ingredients. Let sit in fridge at least 1 hour and up to 24.

Press patties into whatever size you like. I made 9 last night. Warm up non stick skillet with 1tsp of olive oil. Cook burgers 4-5 min each side or until finished. I covered the skillet with a lid for at least the last minute just to make sure they are done.


Modifications:
-I used Worcestershire sauce instead of a steak marinade.
-I did not use bread crumbs.

Here's what you'll need:

Peel the squash, sweet potatoes, and zucchini.

Grate the veggies


Add the rest of the ingredients and mix.


Refrigerate the mixture for an hour+.  I scored the mixture into quarters and then shaped them into patties.


Swirl a little olive oil into the pan and cook until finished.

Our Thoughts:
These burgers were really good.  I loved that I was able to sneak in some extra veggies and it really got my mind whirling wondering what else I could have snuck in there.

Since I did not use the bread crumbs, the mixture was really watery.  Those bread crumbs would have soaked up the water from the veggies and I actually put a paper towel down in the bowl to soak some of the water up.  I think because I also used a grater that had holes really close together, that created more water, too.  I think next time I will just put the veggies in the food processor.

This burger really hit the spot and we all loved it!  I served this with Roasted Acorn Squash.

Roasted Acorn Squash

I got this recipe in my Weight Watchers packet this week and thought they would go great with the veggie-filled burgers.

Roasted Acorn Squash
1 acorn squash
Coarse salt
Chili powder
cooking spray

Directions:  Peel and chop up the squash.  Preheat the oven to 450 degrees.  Coat pan with cooking spray.  Sprinkle on salt and chili powder.  Spray the cooking spray on the squash.  Bake for 16-18 minutes.

Here's what you'll need:

Cut off the ends

Peel


Scoop out the seeds


Cut up

Preheat oven to 450 degrees

Coat a pan with cooking spray.  Spread out and sprinkle with sale and chili powder and then spray the squash with the cooking spray.

In to the oven for 18-20 minutes.  I had some extra sweet potatoes so I cut them up and put them in, too.

Our Thoughts:
We loved this!  I was really kind of surprised because I wouldn't say that I have typically been a squash kind of girl but it was really good.

The one thing I will say is that it was really, really hard to cut, peel, and cut up this squash-much harder than a sweet potato.  The sweetness came out of the squash after roasting but it still had a firm texture like a potato.  I can't wait to make this again and maybe cut up some onion and apple to roast along with it.  I also can't wait to grill the squash.

I did have some left-over sweet potato so I just added it to the pan and roasted it, too.  It was fabulous!  Scott couldn't get enough of it.
