This week's menu has a special request on it, the potato soup. Hope you like it, Jen! I had to bring back the Baked Ziti because Scott and Kanin keep asAsking for it so I won't be re-shooting the pics that night.

If any of you know of any recipes that you'd like for me to be the guinea pig on, please let me know. There are different recipe sites located on the sides of the blog, too, if you'd like to peruse for some of your own.

Before shopping, don't forget to look through your pantry and fridge so you don't buy something that you don't need. Try to match up coupons with sale items and save some extra $$.

Shopping List

2 onions
2 heads broccoli
2 heads cauliflower
Ginger
Yellow bell pepper
5-7 large potatoes
Parlsey
Garlic Powder
Minced onion
4 skinless, boneless chicken breasts
1-1 ½ lbs lean ground beef
½ lb thinly-sliced deli roast beef
1 package bacon (turkey bacon will work, too)
1 jar Dijon mustard
1 jar pimentos
2 (26 oz) jars spaghetti sauce
Soy sauce
3 (14.5 oz) cans chicken broth
All-purpose flour
1 roasted red pepper (optional)
1 box ziti noodles (any tubular noodle)
Brown sugar
Bourbon
1 package refrigerated pizza dough
1 package sliced Monterey Jack cheese
1 egg
Parmesan cheese
1 container half & half
2 container sour cream
1 container ricotta cheese
1 container non-fat cottage cheese
1 package shredded sharp cheddar
1 package shredded mozzarella
1 package sliced provolone cheese
Parmesan cheese
Stromboli Recipe
1 package refrigerated pizza dough
2 Tbsp. Dijon mustard
1/2 pound thinly-sliced deli roast beef
4 oz. sliced Monterey Jack cheese
1/4 cup chopped roasted red peppers (optional)
1 large egg
1 Tbsp. water
2 Tbsp. grated Parmesan cheese

Directions:

Preheat oven to 375 degrees F. Unroll refrigerated pizza dough. Spread mustard evenly over dough, leaving a 1-inch border all the way around. Top with roast beef slices, then cheese, then roasted red peppers, if using. Roll up lengthwise, jelly-roll style. Place on an ungreased cookie sheet. Beat egg and water. Brush over stromboli. Sprinkle cheese on top of stromboli. Bake 25 to 35 minutes, until golden brown on top and cooked through.

Baked Potato Soup Recipe from Paula Deen


8 slices Smithfield Naturally Hickory Smoked Bacon
1 onion, diced
1/2 cup all purpose flour
3 (14.5 ounce) cans chicken broth
5 potatoes, baked, peeled and diced
1 teaspoon dried parsley flakes
2 cups half & half
1 cup sharp cheddar cheese, grated
1 cup sour cream
Salt & pepper to taste (optional)

Directions:

In a Dutch oven cook bacon until crisp; remove and crumble, reserve drippings.
Cook onion in bacon drippings until tender; stir in flour and cook for one minute, stirring constantly. Gradually add chicken broth; cook, stirring constantly until thickened and bubbly. Put in the diced potatoes, parsley, bacon and half & half; cook for 10 minutes. Stir in cheese and sour cream. Garnish with cheese, bacon and sour cream.

Bourbon Chicken Recipe: from Allrecipes.com

4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion
1/2 cup packed brown sugar
3/8 cup bourbon
1/2 teaspoon garlic powder

Directions:
Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight. Preheat oven to 325 degrees F (165 degrees C). Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

Broccoli/Cauliflower Cheese Bake Recipe:
3 c broccoli chopped large
2 c cauliflower chopped large
2 tbsp pimentos (small jar)
1/2 yellow bell pepper chopped
1/2 c ricotta cheese
1 c non fat cottage cheese
1 c shredded sharp chedder
3 oz shredded skim mozzarella

Directions:

Combine, place in pan sprayed with non stick spray. Bake 325 for 15 min.

Baked Ziti

1lb dry ziti noodles
1 chopped onion
1lb lean ground beef
2 (26 oz) jars spaghetti sauce
6 oz provolone sliced cheese
1 1/2 cups sour cream
6 oz shredded mozzarella cheese
2 Tablespoons grated Parmesan cheese

Bring large pot of salted water to boil. Add ziti and cook about 8 minutes, until al dente.
Brown ground beef in a large skillet. Add onion. Add spaghetti sauce and simmer 15 minutes.
Preheat the oven to 350 degrees. Butter or spray a 9x13 baking dish and layer a follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 meat-sauce mixture, remaining ziti, mozzarella cheese, remaining meat-sauce mixture. Top with grated Parmesan. Bake for 30 minutes.

Your baked ziti sounds good! I feel like I'm always making the same things. I like your shopping list, too!

Thanks! I know, it literally had almost become an argument in our house every night after 6 years. I just started planning meals about a month ago and the blog just kind of happened. It has defintely helped me come up with some different things to eat, as well as, to try different types of veggies and food to cook.

The Baked Ziti is phenomenal. It has by far been the most popular item with my family and I think with other readers, too. I'm gonna put your dish on the menu next week. I'll link your name so maybe you can get more followers (if you want them).
