Mom's Snow Cream

We woke up this morning to 10+ inches of snow.  I know to some of you that may not be very much but we never see that much snow here.  While on Facebook I saw quite a few people from my hometown talking about snow cream.  I haven't had snow cream since I was a child.  Snow cream is just like it sounds, "ice" cream made out of snow. 

Mom's Snow Cream
2 cups sweetened condensed milk
1 cup sugar
2 tsp vanila
1 egg
8 cups snow

Directions:  Beat egg until you can no longer see white.  Add sugar, milk, and vanilla.  Go out into clean snow (we NEVER did the first snow of the year) and gather a bunch of snow.  Pour the mixture over the snow.  May have to add a bit of milk to reach the consistency you desire.

Here's what you'll need (plus 8 cups snow):

Beat egg until no longer see white.


Add 2 cups sweet condensed milk

Add 1 cup sugar

Add 2 tsp vanilla

Get your snow




Pour the mixture over the snow and stir.

Our Thoughts:
Snow cream is definitely a country thing.  When I told Scott that I was going to make snow cream he had no idea what I was talking about.

The kids loved it.  They had a lot of fun helping to make it and I think they were just surprised at how much it tasted like ice cream.  Scott took a bite and said, "tastes just like ice cream" but I still think he was freaked out to eat snow because he only had that one bite and that is not like him at all.

It did remind me of growing up but I will say it was way too sweet for me, which is probably why the kids loved it so much.  I think the sweet condensed milk and the sugar just put it over the top for me.  LOL

I'm glad to have done this with the kids.  I hope it made a memory for them.

Mom's Southern Cornbread

I love cornbread.  Yes, I know that it isn't good for you but I love it.  In our house, though, there is a battle between sweet cornbread.  Scott doesn't like it unless it is sweet and I say it isn't cornbread unless it is like my mom's.  Her's is just a plain corn meal mix and flour cornbread.  Now, I have heard of some Southerners adding in a can of cream style corn or even some jalapenos or onions but, for me, I just like it plain.

Mom's Southern Corn Bread
2 cups corn meal mix
1/2 cup all-purpose flour
1 package of sweetern or 1/2 tsp sugar
1 egg
Milk
Crisco

Directions:  Preheat oven to 400 degrees.  Mix the corn meal, flour and egg.  Add milk until it is pancake consistency.  Take your wrought iron skillet and put it on the stovetop.  Put about 1 1/2 Tbsp of Crisco in the pan and swirl it around.  Let the grease get hot and then add it to the corn meal mix.  (It should crackle when added).  Pour the mixture into your wrought iron skillet.  Bake until the top is lightly brown.

*You really need to make this in a wrought iron skillet.
**As with all home-style recipes, these ingredients are not definite.  If you add a little more or less of one or the other, it is ok. 

Here's what you'll need:

Preheat the oven to 400 degrees.

Put the Crisco in your skillet and let it melt.

Mix the corn meal, flour, sweetener, and egg together.

Add milk to the bowl until is is pancake consistency.


Swirl the grease all around your skillet to coat and then pour it into the cornmeal.


Pour the cornmeal into the skillet.  It will probably crackle a bit.

Into the oven until the top is light brown, probably about 25-30 minutes.

Flip the cornbread out of the skillet onto a plate and here is what you get:

Our Thoughts:

I really don't know what else to say about this cornbread.  It has been a staple in my life and I think it is the best I've ever tasted.  The wrought iron skillet will make the top (bottom when you pour it in) nice and crispy when you flip it out.  Inside, the bread is moist. 

My dad used to always take the leftovers and crumble them up in a glass with some cold milk.  I still keep the leftovers and heat up and smear butter all over it. 

I will definitely make this for the rest of my life!

Mom's "Stew"

Mom's "Stew"
1lb hamburger meat
3 or 4 large potatoes or several small ones, peeled and cut into cubes
2 or 3 cans of tomato sauce
1 onion diced
Lots of salt and pepper

Directions:  Peel, cut and cube the potatoes.  Put them in water to boil (like making mashed potatoes).  Brown hamburger meat, drain and add to potatoes.  Add tomato sauce and diced onion.  Let boil for a 20-30 minutes and then turn down to simmer.

Modifications:
-I added a can of carrots and peas.
-I added 1 can of diced tomatoes.

Here's how I did it:

#1 I peeled and cubed 3 very large potatoes.  I put them in some water to boil.  I added 1 diced onion to the water, too.



#2 I browned the hamburger meat, drained and added it to the pot.


#3 I added 1 can of peas and corn and 1 can of diced tomatoes.  I then added 2 small cans of tomato sauce.

#4 I then let it cook on high for about 30 minutes.  Turned it down to simmer until ready to eat.

I don't know why we have always called this stew when it is more like a vegetable soup, but that is what we've always called it.  Growing up it was always hamburger meat, onion, potatoes and tomato sauce.  That's it.  It might sound really, really plain but let me tell you, it is FANTASTIC!

As we got older, mom sometimes would change the hamburger meat out for stew meat but I prefer hamburger meat in it.

When I got married I made it mom's way one time and Scott kindly requested that I add some vegetables; thus, mom's stew became mom's vegetable soup.

Needles to say, we eat this all of the time.  Spring, Summer, Fall, Winter.

Turkey Sloppy Joes

Turkey Sloppy Joes
1 lb ground turkey
1/4 onion, chopped
About 1/4-1/2 cup ketchup
About 2 Tbsp mustard
About 2 Tbsp brown sugar
About 1 Tbsp worcestershire sauce
1 small can tomato sauce

Directions:  Cook ground turkey through, drain and return meat back to skillet.  Add a couple of swirls of mustard, 3-4 really big squeezes of ketchup, 1 can tomto sauce, a couple dashes of worcestershire and a handful of brown sugar.  Mix together and let simmer 10-15 minutes.  As with all of my mom's recipes, there is nothing exact, everything is seasoned to taste.

#1 I browned the turkey and cooked it with the onions.


#2 I added a couple swirls of mustard and 3-4 big squeezes of ketchup.



#3 I added 1 can of tomato sauce.


#4  Some brown sugar, worcestershire sauce and salt/pepper.

Review:

Once again, my mom's recipes are the best to me!  I love the tanginess of the mustard and I usually end up adding more mustard to my sandwich, as well.  As I said above, there is no set recipe.  If there is something you think might be missing, i.e. hot sauce, green peppers, dry mustard, just go ahead and add and taste.

I didn't eat my sloppy joe on a bun but rather with some iceberg lettuce as a wrap and it was yummy.  Of course, this sauce can be used fr ground beef or pork, as well.

Mom's Broccoli, Cauliflower and Carrot Salad

Mom's Broccoli, Cauliflower and Carrot Salad
1 head of broccoli
1 head of cauliflower
10-15 sliced carrots
1/2 diced red onion
3/4 cup sugar
3/4 cup apple cider vinegar
3/4 cup mayo

Directions:  Wash vegetables.  Cut up broccoli, cauliflower, carrots and red onion.  Combine sugar, mayo and apple cider vinegar.  Pour the dressing over the vegetables, mix and refrigerate.

Here's what I started with: 


 Here's how I did it:

#1 I washed and cut off the stems of the broccoli.  I cut the broccoli into bite-sized pieces.


#2 I washed the cauliflower and cut it in to bite-sized pieces.


#3 I sliced up about 15 mini-carrots.


#4 I measured out 3/4 cup mayo, 3/4 cup sugar and 3/4 apple cider vinegar and mixed it until all of the mayo absorbed.





#5 I diced 1/2 of a red onion and then poured the dressing over the veggies.

Review:

Once again, Mom's recipes are the best.  This is an absolute staple for all family gatherings in the summertime.  It is light, sweet and refreshing.  I have seen similar salads in which raisins are added, as well.  This recipe will definitely not disappoint!  It is awesome!!
