Biscuit Tostadas

I got this recipe a couple of weeks ago from my friend, Sue. After she gave it to me, I saw a different version where you can actually bake the biscuits with the cooked meat and cheese on it and then add the lettuce and other toppings after you pull it out.

Biscuit Tostadas from Sue
1 tube of biscuits
1lb hamburger meat
1 jar salsa
Lettuce
Cheese
Tomatoes
Black olives

Directions: Open up each biscuit in half and spread them out on a baking dish. Cook as directed on the container. Meanwhile, brown hamburger (turkey, chicken) meat. Mix in ½ cup of salsa in with the meat or you could also use a taco seasoning packet. Spread meat mixture onto biscuits and top with your favorite taco toppings. Serve with salsa, sour cream, guacamole, etc.

Here's what you'll need:

Brown the ground beef

Chop up 1/2 of an onion (this was plenty).

Chop up about 1/4 of a head of lettuce (this was plenty).

Dice about 1/4 of a tomato (this was plenty).

Drain the ground beef.

Separate the biscuits.

After separating the biscuits, lay them out on a cookie sheet and pressed them together so there aren't any big holes.

Throw them into a preheated oven (depending on the directions on your biscuits).

Once the biscuits are finished, pull them out and then put all of the toppings on top of the biscuits.






Put it back into the oven so the cheese can melt.

Our Thoughts:
This was really good. To me, it tasted just like a soft shell taco except the shell wasn't on top. This was a very quick and easy meal and would be great if you had all of the tacos stuff but no taco shells. It also wasn't as messy as eating tacos as you actually cut these up and eat them with a fork.
Kanin ate 2 of them so that is always a good sign.
I served this with a side of Mexican rice, salsa and sour cream.

Chris~No, the lettuce didn't wilt at all in the oven. I only left it in the oven for maybe 2 minutes. Just enough for the cheese to melt.

Sue, the friend that I got this from, said that she leaves spaces in between the biscuits so that they are all individual. Then, they just pull the biscuits out and everyone individually tops them with whatever they like. They don't put them back in the oven but she said that she liked that idea so that the cheese would really melt.
